Espresso Brownie Granola Bars




Equipment
- 1 silicone bar mold
Ingredients
- 200 g crunchy granola*
- 30 g Brazil nuts*
- 30 g cashew*
- 1 tbsp cacao nibs
- 2 tbsp cocoa powder
- 2 espressos approx. 80 ml
- 50 g maple syrup
- 50 g coconut oil
Instructions
- Preheat the oven to 150°C fan (convection).
- Finely chop the nuts.
- Put all dry ingredients into a bowl and mix together.
- Prepare the espressos and set aside.
- Melt the coconut oil in a pan.
- Add the coconut oil, espressos and maple syrup to the dry ingredients and mix well.
- Fill the mixture into a bar mold.*
- Bake on the lowest rack of the oven for 30 minutes. Let cool in the oven with the oven door open.
Notes
If you do not have a bar mold, you can also use a small square baking pan. Just make sure that the mixture is layered high enough.
Stored airtight and kept cool, the bars will keep for about one week.
