Who else is looking for breakfast inspo? Then I have just the thing for you, a granola with dried fruits and nuts. By the way, this nut granola is made from all-natural ingredients, is sugar-free, and vegan, and is the perfect companion for your storage and meal prep. You can find out more here.
As I’m a real sleepyhead by nature and thanks to maternity leave I can now fortunately stay in bed longer, breakfast is often postponed until late in the morning. It is therefore larger and replaces lunch. And a proper breakfast simply has to include a bowl of delicious granola.
Unfortunately, granola is sold in supermarkets at horrendous prices and, if you take a closer look, is not as healthy as it is marketed to be. In most cases, it contains sugar, sometimes even in considerable quantities. But since we don’t want to do without it, we decided to make our nut granola. It’s very easy to bake, ready in no time at all, and usually lasts for one to two weeks, depending on the quantity. This variety was inspired by the granola that blogger Fanny (her blog fannythefoodie is highly recommended!) created for fooby.ch. You can find the original recipe here.
Ingredients (for 2 preserving jars, 0.5 l each):
- 250g organic wholegrain rolled oats
- 100g hazelnuts
- 100g pecan nuts
- 75g amaranth
- 50g chia seeds
- 3 tbsp date syrup
- 2 tsp cinnamon
- 50g coconut oil, melted (we only had coconut fat, which of course also works, but we recommend the healthier coconut oil)
- 100g dried apricots
- 50g dried berries (blueberries, cherries & cranberries)
Preparation:
- preheat the oven to 150 degrees
- roughly chop the nuts
- mix all ingredients up to and including the coconut oil well in a bowl. everything should be evenly covered with the syrup and oil.
- spread the granola mixture out on a baking tray lined with baking paper, place in the oven, and bake for 30 minutes until brown
- remove the granola from the oven and leave to cool
- roughly chop the dried fruit and mix it into the granola
- store granola in sealable jars
I hope this post was a little motivational speech for you guys to make your granola for breakfast. Honestly, it`s cheaper and way healthier than the store-bought. I am also planning to share some granola bowl ideas with you in the future.
