The thermometer just bursts all records and ice cream is a real lifesaver right now! The best way to cooling down on hot summer days. You probably all know nice cream, the most popuar vegan ice cream. Delicious and incredibly quick to prepare. But don`t you get tired now and then of the all so dominant banana flavor? Of course you can achieve an almost as creamy consistency just with frozen fruits from time to time. But nothing can beat a scoop of super creamy ice cream! Only problem it`s mainly prepared from dairy! Big problem for vegans. Or maybe you suffer from lactose intolerance or just want an cream recipe without an egg? Don’t worry all this is possible without any problems. You just need to veganize your ice cream. And I’ll show you today, how this works.

By the way, did you know that ice cream can be a great dessert to use up leftover fruits? I made this vegan cherry cream ice cream using the juice produced during defrosting the cherries for this pie. Of course, this also works great with any other type of fruit.

Ice maker yes or no?

An ice-cream maker is definitely advantageous when making ice cream, but not mandatory. Ice cream likes, in addition to the cold, to be stirred regularly. The more you stir, the creamier your vegan ice cream will become. And creaminess and ice cream belong together! If you simply put your ice cream in the freezer, then larger ice crystals will form  and your ice cream won’t turn out super creamy.

An ice machine will ddefinitely do the job for you. It stirs your ice cream and cools it at the same time without you having to bend a finger. As I said, it`s not a must. You can pour your finished ice cream into a container suitable for freezing and take it out of the freezer from time to time to stir it well. Many people prepare their ice cream this way and it works out pretty fine.
I own an ice cream machine and this recipe was also prepared with the help of such a machine. If you test this vegan cherry ice cream, you can of course also prepare it solely by hand.

What does the classic ice cream consist of? Milk, cream, sugar and in most cases egg. Kind of lot`s of dairy! And definitely a lot to replace right? This may sound intimidating for the first time, but it`s not. Milk can be replaced by a vegetable alternative, as can cream, and the egg can simply be omitted. Super easy to prepare your own vegan ice cream made from vegetable milk isn`t it?

When it comes to choosing milk alternatives, you`re completely free. I chose soy cream and homemade almond milk. If you make your own vegetable milk, you`ll also save on packaging material. A recipe for a 3 ingredient vegan hazelnut milk can be found in my ebook.

Equipment

Ingredients

  • 300 ml almond milk
  • 100 ml soy cream organic
  • 3-4 tbsp maple or date syrup organic
  • 150 g cherries organic
  • 4 tbsp cherry juice

Instructions

  • Pit and halve the cherries.
  • Put all ingredients into the ice cream machine and adjust the machine according to the manufacturer's instructions. Mine recommends 40 minutes, but the ice cream was ready before. Alternatively, fill your ice cream into a freezable container, put it in the freezer compartment and stir well every 20 to 30 minutes until the ice cream has the desired consistency.
