  • 1 cling film
  • 1 Rolling Pin
  • 1 cookie cutter, square-shaped optional
  • 1 cookie cutter for German Jelly Cookies, heart-shaped
  • 1 parchment paper
  • 1 backing tray
  • 1 brush for basting

Ingredients
 

  • 200 g white flour
  • 1 pinch of salt
  • 8 g vanilla sugar
  • 60 g powdered sugar
  • 130 g margarine, vegan
  • soy milk for basting
  • 1 jar raspberry or strawberry jam*
  • powdered sugar for dusting

Instructions
 

  • place all the ingredients except the jam in a bowl. Mix until the ingredients have combined and a dough has formed. Do not knead too hard.*
  • cover the dough with cling film and refrigerate for at least 30 minutes.
  • preheat the oven to 180° Celsius top and bottom heat.
  • roll out the dough between cling film (approx. 3-5 mm). Remove the cling film and cut the dough into evenly shaped squares.
  • place half a teaspoon of jam in the center of a square. Fold the right and left sides into the middle and the bottom side up to form an envelope shape.
  • cut out heart-shaped pieces from the remaining dough and place them on the envelopes.
  • place the cookies on a baking tray lined with baking paper. Brush the envelopes with a little soy milk and bake in the middle of the oven for about 20 to 25 minutes.
  • leave to cool and dust with a little powdered sugar.

Notes

– Only mix the dough briefly until it sticks together, do not knead if possible.
– The result is best when a square cookie cutter is used for the envelopes.
– Do not use jelly for this recipe, it will liquefy and run out during baking.
– When choosing the jam, it is best to use a variety/brand with the highest possible fruit content.
