You think the vegan world is sad because we cannot eat cheese? You are so wrong, instead we vegans even have more fun! Because we tend to get creative, transforming regular dishes into vegan ones. And on top of that our options taste really good too and as a side effect are helping to save the planet!
But let‘s be honest, sometimes we all are in desperate need of some soul food, no matter if vegan or not. This is mostly the moment where we like to get involved with some oozing melting cheese, because let‘s face it, that is what many people are looking for on their soul food. The thing I loved the most before I turned vegan was cheese. And I highly believe that lot‘s of other vegans out there can relate to that. So what to do when these cravings are emerging, but you actually refuse to eat cheese as it`s an animal produce? Right you prepare yourself this steaming, creamy bowl of vegan mac and cheese and the world will be allright again. Believe me it won‘t disappoint you!
Most of us already know that vegan cheese doesn`t have to do anything with the real thing in terms of taste. But that doesn‘t mean you can‘t create flavorful appealing plantbased dishes that can act as a great substitution for traditional dishes you can not eat being a vegan. And this is what I actually love about veganism. Nothing stops us from creating the dishes we used to love back when we weren`t living on a plantbased diet. On top of that veganism is a great challenge to get creative trying out to recreate certain dishes and making them suitable for us. But what makes these macaroni with vegan cheese sauce a real go to dish? Well first of all the ingredients… In case you thought there was any kind of processed vegan cheese involved, I’m sorry that is not the case. Instead all you need for this recipe is some fresh clean food. In other words grab yourself a cauliflower and some potatoes, combine it with a little bit of garlic and a peppery note! The perfect flavor combo. Not to mention the creamy texture. Just like the original mac and cheese.

Vegan Mac and Cheese
Ingredients
- 350 g cauliflower organic
- 150 g potatoes organic
- 200 ml vegetable stock organic
- 100 ml soy cream organic
- 2 garlic cloves organic, pressed
- ½ tsp salt organic
- ¼ tsp white pepper organic
- 1 tsp turmeric powder organic
- a pinch of ground nutmeg organic
- ½ tsp reclette spice mixture optional
- 300 g macaroni pasta organic
- 1-2 tbsp nutritional yeast organic
- 1 tsp cress organic
Instructions
- Rinse off the cauliflower, cut into pieces and remove the green parts. Peel potatoes and slice them.
- Fill a pan with water, add a vegetable bouillon stock, the cauliflower and the potatoes. Cook for about 20 minutes or until the potatoes and cauliflower can be easily pierced with a knife.
- Put the cauliflower and potato slices into a mixer, add all the other ingredients from the list up to the raclette spice mixture. You can actually directly use the stock you cooked your veggies in. Purée everything into a creamy sauce.
- Cook the pasta according to the instructions on the packaging while you are preparing the sauce. Drain off the pasta water and mix the pasta immediately with the vegan cheese sauce.
- Serve in a bowl and sprinkle on some nutritional yeast and fresh cress.
