New York Rolls with Pistachio Cream



Equipment
- 1 piping bag
- 1 piping nozzle
- 2 baking trays
- 8 cake rings
Ingredients
- 2 packs croissant dough*
- dental floss
- 1 jar pistachio cream*
- chopped pistachios
Instructions
- Preheat the oven to 200°C (390°F).
- If needed, unroll the croissant dough and use dental floss to cut it into rolls about 10 cm wide. Line a baking tray with parchment paper and place the cake rings on top. Put one roll into each ring. Place a second baking tray on top of the rings.
- Bake on the second lowest rack, covered, for 20–25 minutes. Ideally, weigh down the top baking tray with something heavy, such as a pizza stone.*
- Remove the top baking tray and continue baking uncovered for another 5–10 minutes, until the rolls are golden brown on top. If necessary, move them slightly higher in the oven, keeping a close eye on them to prevent burning.*
- Remove the rolls from the oven and allow them to cool.
- Transfer the pistachio cream into a piping bag fitted with a nozzle. Use a knife to make small cross-shaped cuts on the top of each roll and pipe the pistachio cream inside until it starts to gently ooze out.
- Sprinkle with chopped pistachios.

To achieve the flat, characteristic shape of New York Rolls, it’s important to cover the cake rings and weigh them down. Otherwise, the dough will rise too much and the shape won’t be authentic. Baking times may vary depending on your oven, so keep an eye on the rolls while baking.
