No problemo, because with this vegan carrot lox recipe you can satisfy your cravings for smoked salmon in no time without any animal suffering. How does this work? The solution is called carrot lox. Taste and consistency are 100 % on point! Just like the original. Maybe even a tick better and healthier, of course. The vegan salmon is also very easy to prepare without much effort. Grown-ups and kids will like it, as well as those skeptical about a vegan diet.

Ingredients

  • 500 g carrots organic
  • 1 tsp salt organic
  • 2 tbsp linseed oil organic
  • 2 tbsp liquid smoke*
  • 2 tsp. lemon juice organic

Instructions

  • Peel carrots and steam for 15-20 minutes. Carrots should be cooked but not too soft. Allow carrots to cool.
  • Carefully slice carrots into thin strips with a peeler or knife.
  • Mix carrot strips with remaining ingredients and marinate in a resealable container in the refrigerator for at least 24 hours, preferably 2-3 days. Turn container over from time to time.

Notes

*Instead of liquid smoke, you can also use nori leaves. Depending on the size of the nori leaves, the amount will vary. 2-to 3 small nori leaves should be enough.
*You can also braise the carrots in the oven instead of steaming.
