Pumpkin Spice Granola

I feel kind of risky today, thus I`m going to take a chance to share a super scrumptious pumpkin spice granola recipe with all of you despite the fact that you might be oversaturatted by the overfloating availability of pumpkin spice flavored recipes. What should I say… It`s a never ending love story! Obviously I don`t get tired of that spice, which makes me believe there might be a float of many more recipes to come. But let`s stick with the granola one for today!

There`s two things I would like to know from you guys. First of all which one is your favorite spice mixture you will never ever get tired of? Guess you already know mine, *LOL*. Second do you make your own spice mixtures or do you buy them? Honestly as much as I would like to get into experimenting, creating homemade spice mixtures, I usually stick to the storebought ones. Only exception; exactly pumpkin spice. The reason for that is a very pragmatical one, I just haven`t found any store selling it as a already pre-made mixture. Yes, that`s a true fact! Although a few weeks back a little birdie gave me a tip, where I might find it. We will see….

Anyways, in case you like to make your own pumpkin spice mix, it`s pretty darn simple. All you need are the following spices; ground cinnamon, ground ginger, ground nutmeg, ground cloves and allspice. Personally I like to go with a high cinnamon and ginger ratio and tone it down with the nutmeg, clove and allspice. It will be mostly something like this; 2 tsp ground cinnamon : 1 tsp ground ginger : 1/4 – 1/2 tsp for each of the other spices. But you go ahead and try your own ratios. Just find out what works the best for you.

In case your are new in the whole making granola at home type of thing, then check out this blog post, where all the basics for making your own granola are listed. I just would like to add something to that matter. If you like the chunky kind of granola, the ones with the huge bits, you would likely have to use more “glue”, aka more sugary base to make the small pieces stick together to build big chunks.

Ingredients
 

  • 250 g roasted pumpkin organic
  • 350 g rolled oats organic
  • 220 g soy flakes organic
  • 100 g dried black currants
  • 2 tbsp coconut oil organic
  • 2 tbsp almond butter organic
  • 2 tbsp agave syrup organic
  • 2-3 tsp pumpkin spice

Instructions
 

  •  I roasted my pumpkin in the oven the day before. All you need to do is halve it, place it upside down on a baking sheet layed out with parchment paper and put in the oven at 250° Celsius until it`s nicely roasted (about 50 minutes). Take it out the oven and let cool down.
  •  Preheat oven at 180° Celsius.
  •  Remove pumpkin flesh and put in a bowl. Add all the dry ingredients.
  •  Melt coconut oil on low heat in a pan, add almond butter and agave syrup. Mix until well combined.
  •  Pour liquid mixture to the dry ingredients and mix until everything is coated with the liquid.
  •  Pour granola mix onto a baking sheet layed out with parchment paper and bake it in the oven until dry and nicely browned. It takes at least 50 minutes, depending on the baking sheet even longer. You can also divide your granola into two batches, which will make the baking process quicker.
